Cereal Lemon Bars Recipe

 

Like a lot of people for the New Year one of my goals is to eat healthier, especially around breakfast, a meal I’m ashamed to admit I often forget. Eating breakfast really does get you started for the morning and while most mornings I’m happy with a bowl of cereal but to get me into the breakfast habit I had to make something that’s a little more dessert like to get me started. Since I was having a citrus taste that ended up being Cereal Lemon Bars, and they turned out so well I wanted to share the recipe.

The first step was going to the store and getting the ingredients I needed. Because this recipe is fairly simple I had everything except for the lemons and the Honey Bunches of Oats® which are the main ingredients.

Ingredients:

  • 1 Stick of Butter
  • 1/2 Bag of Honey Bunches of Oats®
  • 4 Large lemons
  • 1/4 Cup Powdered Sugar
  • 1 1/2 Cup Flour
  • Salt
  • 2 Teaspoons Lemon Zest
  • 1 1/2 cups sugar (plus extra to sprinkle on top of the cereal lemon bars)
  • 3 eggs
  • 2/3 cup squeezed lemon juice

recipeMaking the Crust

First preheat the oven to 360 degrees. Mix together the butter, powdered sugar, 1 cup of flour, lemon zest, and Honey Bunches of Oats®. To get the lemon zest use a grater and scrap the peel off the lemon, and for the cereal put it in a freezer bag and use a roller to break up the pieces into a fine mix. Once everything is mixed put into an 8 x 8 inch baking pan and cook for about 20 minutes or until the edges are golden brown.

To make the lemon bar inside, which you can start on while the crust is cooking, mix together eggs, sugar and lemon juice until combined completely. Then add in 1/2 cup of flour and mix. Once the crust is done, pour this mixture in while it’s still hot and bake everything for 30 more minutes. When it comes out of the oven you can sprinkle the sugar on and cut it once it has cooled.

And that’s it! Everyone loves them.
